Caponata cake

Amount Ingredient
1 Eggplant
1 corn
1 Onion
1/2 Red bell
3 Carrots
2 Eggs
3 bay leaves
Necessary quantity herbs
Necessary quantity salt (optional)
5 tbsp Oil

I used half of the recipe for the mass of the Gluten free cookies

You can vary the mass with the one you like the most.

Cut all the vegetables into small cubes, pour them on a roasting pan, sprinkle with the oil and add the herbs that you like, cover them with lead paper and take them to the oven until they are tender. Remove them, pour them into a bowl and add 2 eggs, mix and leave it in a bowl for 2 minutes.
On another broil spread with oil, stretch the dough, cook it for a few minutes in the oven, remove it and add the stuffed.
Return the preparation to the oven until it is cooked.
Cut it and serve it! :)
