Chia Cookies

Amount Ingredient
2 cups Chickpea flour
1/4 cup Chia
1/2 cup Cassava starch
4 tbsp Olive oil
Necessary quantity Salt (optional)
Necessary quantity Water

Place the dry ingredients and the chia seeds in a bowl, mix. Incorporate oil, water and salt. The dough has to take sticky consistency. Let it rest for 30 minutes so that the flours absorb moisture. Stretch the fine dough, 0.2 inches thick approx. on a surface sprinkled with manioc starch so that it does not stick. Use a cookie cutter, in this case I used a round one. Place the cookies in a broil pan sprinkled with the starch.
Bake at 360 ° F for 10 minutes or until golden brown.
