Eggplant rolls

I bring you a very simple recipe, these rolls are perfect to accompany meat or pasta. It is a different way of eating vegetables. We do not necessarily have to eat salads to incorporate vegetables into our diet. Recipe: Makes 9 servings aprox.

Ingredients:

Eggplants
500g
Cooked spinach
4 tbsp
Ricotta
1
Onion
1 tbsp
Olive oil
Necessary quantity
Tomato sauce
Necessary quantity
Condiments

Directions:
Wash the eggplants and cut them lengthwise into thin slices.
Grease a pan with oil, arrange the eggplants on top and take them to the oven until they are tender.
While they are cooking, cut the onion into small cubes and cook it in a pan with a little of oil.
In a bowl, mix the cooked spinach, the onion, the ricotta and the condiments that you like most.
When the eggplants are cooked, remove them from the oven and c fill them with the previous mixture forming rolls.
On a dish suitable for oven spread with tomato sauce, arrange the rolls on it, cover them with tomato sauce and cheese.
Take them to the oven until the cheese is melted.
