Pumpkin pancakes

There are important things about this recipe:

1- I used kale because it was what I had, but the idea is to add another vegetable so we have more colors in the preparation, remember that each vegetable gives us different nutrients, so it is preferable that our foods are colorful. You can use chard, spinach, broccoli, etc.

2- For the preparation of the dough we can use cow's milk, vegetable milk or simply water.

3-Caramelize the onion and cook it over low heat for several minutes until it turns golden and so the flavor becomes sweet simply with the sugars of the onion.

4- You can accompany them with some sauce of tomatoes in this case I only covered them with cheese and as a side I used a little bit of wild rice and cucumbers.

Amount Ingredient
Small pumpkin
Kale leaves
2 tbsp
1 pinch
Salt (optional)
2 teaspoons
Olive oil

Wash and peel a small pumpkin, cut it in half, place it in a nylon bag or al bowl covered with nylon and take it to the microwave until the pulp is tender.
Smash the pulp and reserve it.
Saute the onion with a teaspoon of olive oil, reserve it.
Then cook the Kale cut in julienne with the other teaspoon of olive oil until the leaves are tender.
In a bowl, mix all the ingredients, cut the nuts and spice up them to taste.

Pancake dough:
Amount Ingredient
1 y 1/2 Cup of flour
1 tbsp Sugar (optional)
1 pinch Salt (optional)
1 Egg
Necessary quantity low fat milk

To prepare this dough you should mix the ingredients and add milk until the dough  is squeak.
Incorporate the ingredients well with a whisk or in a blender to prevent lumps from forming.

Preheat a pan spread with oil and pour a little of the mixture until it covers the bottom, the thickness of the dough should be fine and when it is ready on one side we turn it over and cook the other.

The amount of pancakes will vary according to the size of your pan.

To finish, fill them and give them the shape of handkerchiefs, place them on a roasting pan and take them a few minutes to the oven to serve them warm.
