Beet leaves Frittata

Ingredients:
Amount Ingredient
1 tbsp
Oil
1/2
Onion
1 bundle
Beet leaves
3
Eggs
Necessary quantity
Oregano
Necessary quantity
Salt
Necessary quantity
pepper


Directions:
Wash and chop the onion and fry it in a pan with the oil previously warm until it takes color,
Add the washed and chopped leaves to the pan and let it cook with the onion until it evaporate all the liquid the leaves come off.
Remove from heat, place in a bowl, add eggs and seasonings.
Bring the preparation back to the hot pan until the eggs  coagulate and take color.
With a plate turn it around, place it in the pan until the other side is cooked.
Serve it hot.
